Apple Gingerbread Pudding
I cut the leftover gingerbread into small squares and placed it in the bottom of a baking dish. Then I cut an apple into bite-sized pieces and layered it on top, followed by a sprinkling of cinnamon. Cover and bake at 350 degrees for about 45 minutes, until the apple is soft, and you get this sort of gingery bread pudding, which is really quite good!
